Oatmeal Rice Krispie Cookies

- 1 Kitchenaid mixer
- 1 cookie sheet
Ingredients
- 1 c butter room temperature
- 1 c sugar
- 1 c brown sugar firmly packed
- 2 eggs
- 1 t vanilla
- 1 c coconut
- 2 c flour
- 1 t baking soda
- 1/2 t baking powder
- 1/2 t salt
- 2 c quick oats
- 2 c rice krispies
- 1 c nuts of choice
Instructions
- Preheat oven to 375°
Sift together:
- flour, baking soda, baking powder, salt
Beat well:
- Using KitchenAid mixer beat butter, sugar, brown sugar, eggs and vanilla until fluffy.
- Add flour mixture about 1/2 cup at at time to sugar mixture. Continue mixing on medium speed until well blended.
- Remove bowl from mixer. Add coconut, oats, Rice Krispies and nuts. Blend together by hand.
- Shape into balls about 1.5 oz each and place on parchment lined cookie sheet. Bake for about 15 mintues.
