Oatmeal Rice Krispie Cookies

A delicious oatmeal cookie with an extra crunch.

Equipment

  • 1 Kitchenaid mixer
  • 1 cookie sheet

Ingredients

  • 1 c butter room temperature
  • 1 c sugar
  • 1 c brown sugar firmly packed
  • 2 eggs
  • 1 t vanilla
  • 1 c coconut
  • 2 c flour
  • 1 t baking soda
  • 1/2 t baking powder
  • 1/2 t salt
  • 2 c quick oats
  • 2 c rice krispies
  • 1 c nuts of choice

Instructions

  • Preheat oven to 375°

Sift together:

  • flour, baking soda, baking powder, salt

Beat well:

  • Using KitchenAid mixer beat butter, sugar, brown sugar, eggs and vanilla until fluffy.
  • Add flour mixture about 1/2 cup at at time to sugar mixture. Continue mixing on medium speed until well blended.
  • Remove bowl from mixer. Add coconut, oats, Rice Krispies and nuts. Blend together by hand.
  • Shape into balls about 1.5 oz each and place on parchment lined cookie sheet. Bake for about 15 mintues.
