Ingredients
  

  • 1 c butter room temperature
  • 1 c sugar
  • 1 c brown sugar firmly packed
  • 2 eggs
  • 1 t vanilla
  • 1 c coconut
  • 2 c flour
  • 1 t baking soda
  • 1/2 t baking powder
  • 1/2 t salt
  • 2 c quick oats
  • 2 c rice krispies
  • 1 c nuts of choice

Equipment

  • 1 Kitchenaid mixer
  • 1 cookie sheet

Method
 

  1. Preheat oven to 375°
Sift together:
  1. flour, baking soda, baking powder, salt
Beat well:
  1. Using KitchenAid mixer beat butter, sugar, brown sugar, eggs and vanilla until fluffy.
  2. Add flour mixture about 1/2 cup at at time to sugar mixture. Continue mixing on medium speed until well blended.
  3. Remove bowl from mixer. Add coconut, oats, Rice Krispies and nuts. Blend together by hand.
  4. Shape into balls about 1.5 oz each and place on parchment lined cookie sheet. Bake for about 15 mintues.
