- In a medium size bowl, mix cottage cheese and baking soda. Stir well and let sit in a warm place for about 1 hour to proof (bubble).Melt butter over low heat. Add cheese mixture and Velveeta. Simmer on low heat until all cheese is melted, stirring constantly.Pour in buttered bowl and chill. Serve with crackers or bread.
