Classic Cobb Salad with Homemade Vinaigrette Dressing

Ingredients

For the Dressing:

  • 2/3 c olive oil extra virgin
  • 1/3 c white wine vinegar
  • 1 clove garlic finely chopped
  • 1/2 t Worcestershire sauce
  • 1/2 t dry mustard
  • 1/2 t paprika
  • 1/2 t sugar
  • 1/2 t salt
  • 1/4 pepper

For the Salad:

  • 8 c iceburg lettuce torn into bite sized pieces
  • 2 1/2 c escarole torn into bite sized pieces
  • 1 1/2 c watercress torn into bite sized pieces
  • 1 3/4 c tomatoes chopped
  • 2 1/2 c chicken breast chopped
  • 2 eggs hard boiled and chopped
  • 2/3 c blue cheese crumbles
  • 1 c green pepper diced
  • 2 T chives chopped

Instructions

For the Dressing:

  • Combine all dressing ingredients in a jar with a tight fitting lid. Shake vigorously until blended. Refrigerate dressing.

For the Salad:

  • Combine Lettuce, escarole and watercress. Line a large platter or bowl with the mixed greens. Arrange the remaining ingredients on top of the greens.
  • Just before serving, pour dressing over greens and toss. You may not want to use all of the dressing.

Notes

If escarole or watercress isn’t available, choose two of your favorite greens.  May also add avocado if available.  I think 2 cups green pepper is too much, so you may want to cut back.
